January 2026 — Timely Coffees

An interview with Timely Coffees

What's one thing we should know about you?

We're an Open Door Roastery. That means you can walk in whenever we’re open. No need to book a tour, no need to know someone. Just come in, grab a coffee, ask a question, and see what we’re up to. Whether you’re drinking our coffee at home or looking for a partner to roast yours, the door’s always open.

What excites you about coffee?

You don’t need special access to understand how we roast coffee, where it comes from, or why we do things the way we do. Our decisions are made in the open, guided by our values.

If you could recommend one song to listen to while drinking your coffee, what would it be?

Loose Ends (ft. Jorja Smith) by Loyle Carner.

Processing in Brazil typically involves the “natural” or “honey” method, where the coffee cherry is fermented with some or all of the fruit still attached.

It’s bright and has a sparkling acidity. Perfect for filter, or even as an espresso.

What fictional character does this coffee remind you of?

What's one interesting fact about where this coffee was grown?

Timely Three is a seasonal single-origin coffee from Ethiopia’s Guji region, grown from heirloom coffee varieties. These varieties are often forest-grown indigenous plants that have thrived naturally for centuries. In Ethiopia, processing often uses the natural method, where the whole cherry is dried intact before the beans are extracted.
