An interview with Perk:


What's one thing everyone should know about you?

This month, we’re featuring Perk’s very own! That’s right — it’s coffee from Perk, roasted by Perk. You might be wondering why we decided to roast our own coffee this month, and the short answer is, we’re just super excited about coffee. When this lot came up on our radar, it was too good to pass up, and we wanted to share it with our subscribers (that’s you!). We loved the process so much that we decided to make it official: for every December from now on, you can enjoy Perk Special Edition instalments; coffees that are selected specifically and exclusively for you, that you won't find anywhere else. Enjoy!

What excites you about coffee?

We get excited by the variety that the world of coffee offers. There are so many amazing producers growing great coffee all over the world, as well as roasters roasting coffee in so many different ways. We feel privileged that we can participate in these parts of the industry, all while bringing you something new and exciting with every instalment!

If you could recommend one song to listen to while drinking your coffee, what would it be?

“You Send Me” by Aretha Franklin. It's the kind of song you can shuffle and have a little boogie to while you're making your first cup of coffee in the morning!

Where is this coffee from?
Brazil (Campo das Vertentes Mesoregion in the State of Minas Gerais)

What's your favourite thing about this coffee?
We love how the sweetness in this coffee is perfectly balanced with its richness. It's like drinking liquid cherry ripe — velvety, smooth, and very satisfying.

What is one interesting fact about how or where this coffee was grown?
Pedro Gabarra is the son of Joao Newton Teixeira, and together, they own multiple coffee farms amounting to 1286 hectares. Sustainability is a key focus at Pedro and Joao’s farms; all of their farms are Carbon Free (what we know as Carbon Neutral), UTZ certified, and there are many projects on the farms that contribute to environment preservation. These include; waste management, water management, forest development, tree planting, environmental education, and the ASAS Wings Project, an initiative that rehabilitates illegally traded birds in the two aviaries at Pinhal, one of Pedro and Joao’s farms. The ASAS Wings Project was developed by Mariana Gabarra (whose brother is Pedro). Mariana is also involved in all of the ongoing projects on the farms.

Raven Baxter from "That's So Raven" — bold, confident, and a little bit out of this world!

 

Where is this coffee from?
Ethopia (Yirgacheffe District, Gedeo Zone)

What's your favourite thing about this coffee?
We love that this coffee has a crisp quality to it. It's very complex and wonderfully floral. It has a tangy berry-like acidity, and it has lovely, soft undertones of clove. We love how well these characteristics work together, and make a delicious cup!

What is one interesting fact about how or where this coffee was grown?
This lot represents coffee contributed to Gizaw Washing Station by smallholder producers in Wachoatu Village, in the Yirgacheffe district of Ethiopia. This coffee was grown at very high altitudes, averaging between 1850 to 2200 metres above sea level. High altitudes typically yield cooler temperatures, higher rainfall, and a consistent climate. In these instances, due to the cooler temperatures, coffee cherries can sometimes experience a delayed growth cycle, meaning the coffee cherries will mature more slowly and have more time to develop complex sugars. In the cup, this can mean full flavours, and a concise sweetness. High altitudes can also mean that there is a reduced threat of pests, who cannot thrive in cooler climates with reduced oxygen levels.

Kang Sae-byeok from Squid Games — focused, incredibly complex, and level-headed.
